Homemade Guacamole with Dan Churchill

I recently had the privilege (and absolute blast) to create and play with the amazing Australian chef, Dan Churchill. We enjoyed a glorious day in DUMBO at the Brooklyn Bridge Park, and whipped up three of his simple dips perfect for sporting weekends. We filmed two videos, one on his YouTube page and the other on mine. He regulated two dips while I was left in charge of the guacamole (F YES). Dan Churchill’s Kick-Arse Guacamole

Ingredients

1 Avocado, cubed

1/2 red onion, sliced

Juice of 1/2 a Lime

1 Tbsp Fresh Coriander/Cilantro, finely chopped

Red pepper flakes to taste

Pinch of salt

Pinch of Pepper

2 tsp Olive oil

Method:

  1. In a bowl combine your red onion and your lime juice, set aside for minimum 20 minutes to pickle
  2. Mix the rest of the ingredients in a bowl and top with pickled onion… serve with your favo(u)rite chips or veggies
